The Center for Dairy Research
The Center for Dairy Research (CDR) is a leader in innovative dairy research, processing, education and product development and application that focuses on enhancing the competitive position of Wisconsin's dairy industry. It also provides science-based technical support to Wisconsin cheesemakers, ingredient manufacturers/suppliers, brokers and food companies. The center provides 15 - 18 continuing education short courses focusing on technical and application elements of dairy product manufacturing, dairy ingredients, food safety, cultured products, beverages and end user utilization. CDR also manages the unique Wisconsin Master Cheesemaker Program®, with 71 active Masters throughout the state achieving this status.
Outcomes
Everything the CDR works on is with an eye to enhancing the competitive position of Wisconsin's dairy industry. In turn, the work ensures a variety of safe, high quality, Wisconsin-made dairy products that meet consumer expectations, thereby increasing demand for Wisconsin-produced raw milk.
